			<content:encoded><![CDATA[<p>I wanted to share this recipe with everyone as it hasn&#8217;t made it onto the table for several years.  This was always one of our most popular creations during the Historic Inns of Rockland&#8217;s annual Pies on Parade Event.  Although the recipe is for one tart, it can be easily modified to make individual tarlets as shown in the photo.</p>

1/4 c. sugar</strong></td>

2 to 3 T. cold water</strong></td>

<td>Preheat oven to 350°. In a food processor blend together flour, sugar, and butter until mixture resembles coarse meal. Add 2 tablespoons water and toss until incorporated. Add enough remaining water if necessary until mixture begins to come together but is still crumbly. Refrigerate dough, wrapped in plastic for 1 hour. Press crust evenly onto bottom and sides of an 11 inch tart pan with removable fluted rim. Prick the crust with a fork, line the dough with aluminum foil and weigh it down with pie weights or beans and bake in the middle of oven until golden, about 30 minutes. Make the filling while the crust bakes.</td>

1 tsp. almond extract<br />

1/4 c. seedless raspberry jam<br />
1 T. water<br />
3 c. raspberries</strong></td>

<td>In an electric mixer beat together cream cheese, sugar, almond extract and egg until smooth. Add flour and blend mixture well. Pour the filling into the warm crust, spreading evenly, and bake in the middle of the oven until set, about 20 minutes. Cool the tart in its pan on a rack. In a small saucepan heat the jam and water over moderate heat, stirring until melted and smooth. Remove pan from heat and cool jam slightly. Arrange the raspberries on top of the part and drizzle the jam over the berries.</td>

<td><strong>Note:</strong> You can substitute raspberries for almost any type of berry. You can also do the same with the jam. To make individual tartlets, use a 24 mini muffin pan instead and press large gumball size pieces of dough into each well. Reduce baking times by half.</td>

			<content:encoded><![CDATA[<p>Over the five years we&#8217;ve been innkeepers, we&#8217;ve had many wonderful encounters with guests.  In addition, the guests have wonderful encounters with each other.  You&#8217;ve all heard of the game Six Degrees of Kevin Bacon, well it seems that in the world there are far fewer degrees (although not neccesarily to Mr. Bacon!)</p>
<p>This morning we had one of the most bizarre and amazing coincidences of peoples paths crossing.  There is an Aunt and neice visiting from the UK, one lives in England and the other Scotland.  We also had a newlywed couple from NYC.  After breakfast, the neice approached me to ask if the NYC couple, whom she&#8217;d not met, had just gotten married in Central Park.  You see, prior to arriving at the inn, the aunt and neice had spent some time in New York City and toured Central Park.  While there, a wedding was taking place in the Shakespeare Garden and they decided to stay around a bit to watch the bride and groom have their photos taken.  Well, when this young couple walked into the dining room this morning, the neices jaw nearly fell to the ground as she thought this was the couple that she witnessed getting married in Central Park.  A short while later, the couple confirmed that they indeed did get married and it was the same ceremony viewed by the aunt and neice.</p>
<p>Now I ask you, what are the coincidences that both sets of people would end up here are the LimeRock Inn in Rockland on the same date?  It is just amazing and is one of the many reasons we love what we do!!!</p>

			<content:encoded><![CDATA[<p>I thought I would write about a wonderful guest of ours who visited last night.  Sandi Cirillo is an art teacher and fiber artist from NY.  Her business is called <a href="http://www.especially-for-ewe.com/" target="_blank">Especially For Ewe</a>.  She is making her way up the coast to Lubec and is giving some fiberart workshops along the way.  Sandi has stayed with us about 6 times now, she feels like part of our family at this point.  Please check out her website to see her work.  The site contains her schedule of workshops.  If you ever have the opportunity to attend one you won&#8217;t regret it. </p>
